VINIFICATION: Grapes were harvested at 28°B, destalked and transferred into open fermentation tanks. Regular punch downs ensured good colour and tannin extraction. After a partial fermentation the wine was fortified to approximately 19.0 Vol. % with the addition of matured brandy spirits. Wine was allowed to settle for 2 weeks before racking to 225L oak barrels for finishing.
MATURATION: 12 months – Older French oak barrels & American Oak barrels.
